Gone Fishing

To be able to serve and to eat a whole fish, especially a trout, is part of civilized dining. This applies particularly to the young, who should take to it as soon as they can handle knife and fork; this is a fine way for them to begin taking pride in themselves and their abilities.

We are lucky that the Rainbow Trout Farm in Sedona is open. The farm, located in amazing Oak Creek Canyon, consists of two spring-fed ponds stocked with rainbow trout. They supply all the equipment: simple bamboo-crafted poles, bait, bucket and nets. You have to keep what you catch. They clean them for you. During non-virus times, you can use their grills and picnic on the grounds.

Last week, we caught 7 trout, then immediately took them home and grilled them. They were filleted so we stuffed them with lemon, garlic and rosemary (which grows as hedges here); wrapped them in aluminum foil; and put them on the grill. It was a great farm-to-table experience for everybody!
